Tropical Popsicles

I like making popsicles in Dixie cups; I can make as many as I like without worrying about washing molds or losing the sticks that come with them. With these pops made from Norman’s Greek yogurt, I also like that I can give my children something healthy and sugar-free (with protein!) without them realizing. Want another popsicle? No problem.

Ingredients:

Pina Colada Flavor:

  • 1 (5.3 oz) Norman’s Light Vanilla Greek Yogurt (Mandarin flavor also works)
  • ¾ cup finely diced pineapple
  • 1 banana
  • 1-2 teaspoons sweetener of choice, optional
  • 3 tablespoons toasted coconut

Creamy Berry Flavor:

  • 1 (5.3 oz) Norman’s Light Strawberry Greek Yogurt or Norman’s Greek Creamy Blends in Summer Strawberry, Blissful Blueberry or Red Raspberry
  • ¾ cup thawed frozen strawberries
  • 1 banana
  • 1-2 teaspoons sweetener of choice, optional

Directions:

  1. In a blender, combine all ingredients of the flavor of your choice with the exception of coconut. Taste and add sweetener if necessary (depending on the sweetness of your fruit).
  2. If preparing the Pina Colada flavor, divide coconut between Dixie cups.
  3. Add yogurt mixture to cups. Freeze for 1 hour. Insert popsicle sticks and freeze until firm. Remove Dixie cup from popsicle. Enjoy immediately or let thaw for 5-10 minutes for a creamier consistency.
