Tropical Popsicles
I like making popsicles in Dixie cups; I can make as many as I like without worrying about washing molds or losing the sticks that come with them. With these pops made from Norman’s Greek yogurt, I also like that I can give my children something healthy and sugar-free (with protein!) without them realizing. Want another popsicle? No problem.
Ingredients:
Pina Colada Flavor:
- 1 (5.3 oz) Norman’s Light Vanilla Greek Yogurt (Mandarin flavor also works)
- ¾ cup finely diced pineapple
- 1 banana
- 1-2 teaspoons sweetener of choice, optional
- 3 tablespoons toasted coconut
Creamy Berry Flavor:
- 1 (5.3 oz) Norman’s Light Strawberry Greek Yogurt or Norman’s Greek Creamy Blends in Summer Strawberry, Blissful Blueberry or Red Raspberry
- ¾ cup thawed frozen strawberries
- 1 banana
- 1-2 teaspoons sweetener of choice, optional
Directions:
- In a blender, combine all ingredients of the flavor of your choice with the exception of coconut. Taste and add sweetener if necessary (depending on the sweetness of your fruit).
- If preparing the Pina Colada flavor, divide coconut between Dixie cups.
- Add yogurt mixture to cups. Freeze for 1 hour. Insert popsicle sticks and freeze until firm. Remove Dixie cup from popsicle. Enjoy immediately or let thaw for 5-10 minutes for a creamier consistency.
